Tender cubes of marinated lamb grilled to perfection and served with a cooling herbed yogurt sauce — this Lamb Souvlaki is a Mediterranean favourite that delivers bold, rustic flavour with every bite. Perfect for restaurant menus, catering platters, or summer grilling specials.
Ingredients
For the Lamb Souvlaki:

1kg lamb leg or shoulder, cut into 2.5cm cubes

3 tbsp olive oil

2 cloves garlic, minced

1 tbsp dried oregano
-
1 tsp ground cumin
-
1 tsp smoked paprika
-
Juice of 1 lemon

Salt and pepper to taste

8–10 wooden or metal skewers
For the Herbed Yogurt Sauce:

250g Greek yogurt

1 tbsp olive oil
-
1 tbsp lemon juice
-
1 tbsp finely chopped fresh mint or dill

1 small clove garlic, minced

Salt and pepper to taste
To Serve:

Warm pitta bread or flatbreads

Fresh salad (tomatoes, onions, cucumber)

Extra lemon wedges
Instructions

Marinate the Lamb:
Combine olive oil, garlic, oregano, cumin, paprika, lemon juice, salt, and pepper in a bowl. Add the lamb cubes and mix well. Cover and refrigerate for at least 2 hours (or overnight for deeper flavour). -
Prepare the Yogurt Sauce:
In a separate bowl, combine Greek yogurt, olive oil, lemon juice, garlic, herbs, salt, and pepper. Mix until smooth and refrigerate until serving. -
Grill the Souvlaki:
Thread marinated lamb onto skewers. Grill over medium-high heat for 8–10 minutes, turning occasionally, until golden and cooked through. -
Serve and Enjoy:
Serve the lamb skewers with warm pittas, salad, and herbed yogurt sauce. Drizzle with olive oil and squeeze over fresh lemon for a burst of flavour.
